Collard Greens

I had some collard greens for lunch and then found them at Mekong Market for 79 cents a bundle. Somebody tell me a good recipe for greens before I boil them for an hour with some garlic and jalapenos.

I think my mom steams, squeeze water out and then lightly sautees them with a bit of oil, garlic, soy sauce, etc., to taste.

the soul way: boil the crap out of them with hamhock, bacon, chopped onions, salt/pepper.

chop the greens (after rinsing rinsing rinsing)
Line the bottom of a large stock pot with the bacon.
Cook on medium heat until done, obtaining as much bacon grease as possible.
Add the water to the stock pot and the grease and bring to a boil.
Now add the 1/2 of the chopped onion, ham hock, pepper and salt to taste.
Let mixture boil for 10 minutes.
Add the collard greens, other half of the onions and more salt and pepper to taste if desired to the stock pot.
Rapidly boil for 45 minutes.
Reduce heat and let simmer for 4-6 hours.

this is why my mom got me up at the crack of dawn to make greens for thanksgiving and new years.

there's a hipster bbq place here in my neighborhood that dared to say they served southern greens. i ordered them and got angry - they tasted like garlic, were hard and there was NO FLAVOR and NO FAT.
